Cans for Days

Cans For Days is an easy, warm and delicious soup that you can make in a crockpot over the course of just a few hours. It’s super simple to throw together and lends itself well to doubling. It’s pretty much impossible to mess up.
Ingredients:
- 1 15 oz. can chicken broth
- 1 15 oz. can corn
- 1 15 oz. can black beans
- 1 15 oz. can diced tomatoes
- 1 10 oz. can Rotel (regular or spicy)
- 8 oz block of cream cheese
- 2-3 frozen chicken breasts
- 3 tablespoons Ranch seasoning
Directions:
- Place frozen chicken in the bottom of crockpot
- Add ranch seasoning
- Pour all cans into the crockpot (corn and beans drained)
- Stir ingredients before leaving to cook for three hours on high
- After three hours, turn off heat and remove chicken. Chop or shred chicken and return to soup.
- Cut cream cheese into cubes and add to the pot. Stir until melted. The cubes will never fully dissolve into the liquid, so if there are small pieces of cream cheese, that is normal!
- Enjoy!
Serve with cilantro, green onion, avocado, fresh lime juice, and sour cream. Best enjoyed with tortilla chips.
